5 Minute Avocado Bean Breakfast

Yum. I have been on the search for new breakfasts that have veggies and protein because I have been realizing that I don't do as well with sweet grain based breakfasts.

As we know it is darn importante to have a solid breakfast to start the day and boy does it suck when I can't focus at 10:30 in the morning when I have a long to do list.

So I came up with this idea one day when I saw my beans in the fridge that I cooked earlier in the week (a great thing to do on Sunday or Monday night to ensure there is something easy and solid to eat for the week).

Now i am no chef, and the food I make is usually pretty simple so if you need more flavor try experimenting with some of your favorite spices (soy sauce, toasted sesame oil, nutritional yeast, basil, salt and pepper, etc...).

 

5 Minute Avocado Bean Breakfast

-1/2 ripe avocado

-1 small tomato

-1/2 cup cooked beans (I used pinto here, but feel free to try with other beans too!)

-1/4 tsp tumeric (cuz its good for ya)

-1/4 tsp ground cumin (cuz its yummy)

-pinch-o-sea salt

-sprinkle of pepper

Optional

-1 or so tbls of salsa

-1 cooked egg (over easy or hard boiled)

Reheat beans in a hot skillet with a touch of oil, add tumeric and cumin. Stir. Chop up tomato into cubes and egg (if using) and add to beans when beans are hot and put into the half of avocado with the pit removed. Sprinkle salt and pepper on there and your good to go!!
